Spinach Potato Omelette

Our staffers very own recipe with our Vertical Roots Spinach. Lise is a Nutritionist from France, currently working in Canada, as her husband takes a position at the U of A. She joined our team several months ago and happy to use our amazing nutritional product for some home made recipe such as this one.

Ingredients
  

  • 2 cups Vertical Roots Spinach
  • 6 eggs
  • 1/2 medium onion, diced
  • 1 large potato - yellow or white diced small
  • salt/pepper for taste
  • 2 tbsp Avocado or Extra Virgin Olive Oil

Instructions
 

  • Heat oil in pan and add diced potatoes - salt and pepper for taste.
  • Once potatoes are close to done, add in diced onion and cook until transparent.
  • Add spinach leaves to the potato and onion and cook until soft.
  • In a bowl beat the eggs, add salt and pepper taste and mix well.
  • Add eggs to the potato and spinach mixture and cook for 5 min, letting up the sides of the eggs and tilting the wet egg to move under.
  • Fold each side into the middle and let sit to complete the cook.
  • Sprinkle fresh herbs or sharp cheese at the end if you like. ENJOY!
