Brown ground beef with diced onion, minced garlic, 2 tsp cumin, chili power, oregano and salt, and pepper until no longer pink. Set aside.
Spray the pan with olive oil and add red onions and sweat for 1 min, add in black beans, salt, pepper, 2 tsp garlic powerder, and 2 tps cumin. Heat through and cook until onions are wilted down. Set Aside.
Combine olive oil, lime juice, honey, sugar, dijon mustard, remaining cumin, and garlic powder, with salt and pepper to taste. Stir or blend until mixed well. Set Aside.
Place chopped Vertical Roots Romaine lettuce in a large serving bowl, place the ground beef mixture on top, surround with it corn, black bean mixture, and tomatoes. Sprinkle cilantro over the top. Dress with lime vinaigretteĀ to your liking. Serve for 2.
