Don’t be fooled by the simple ingredients! The vinaigrette and the spices for the beef and beans will elevate this to a fresh and healthy version of taco salad. You can add in your own fresh favorites as well – these are just our go-to’s for southwest flavors.

Southwest Taco Salad

Elevated Taco Salad with homemade lime vinaigretteĀ using local honey producer Fisher's Farms Natural Honey!

Ingredients
  

  • Olive Oil Spray
  • 1/2 Pound ground beef
  • 1 small diced onion
  • 2 garlic cloves (minced)
  • 2 tsp chili powder
  • 2 tsp oregano
  • 1/4 cup sliced red onion
  • 1/2 can black beans
  • 1/2 can corn
  • 1/2 cup grape tomatoes
  • 4 tbsp cilantro
  • 8 cups chopped Vertical Roots Romaine Lettuce
  • 4 tsp garlic power
  • 6 tsp cumin
  • 1 tbsp djion mustard
  • 1/2 cup olive oil
  • 3 medium limes (juiced)
  • 1 tsp salt / pepper
  • 2 tbsp Fishers Farms Natural Honey
  • 1 tsp raw sugar

Instructions
 

  • Brown ground beef with diced onion, minced garlic, 2 tsp cumin, chili power, oregano and salt, and pepper until no longer pink. Set aside.
  • Spray the pan with olive oil and add red onions and sweat for 1 min, add in black beans, salt, pepper, 2 tsp garlic powerder, and 2 tps cumin. Heat through and cook until onions are wilted down. Set Aside.
  • Combine olive oil, lime juice, honey, sugar, dijon mustard, remaining cumin, and garlic powder, with salt and pepper to taste. Stir or blend until mixed well. Set Aside.
  • Place chopped Vertical Roots Romaine lettuce in a large serving bowl, place the ground beef mixture on top, surround with it corn, black bean mixture, and tomatoes. Sprinkle cilantro over the top. Dress with lime vinaigretteĀ to your liking. Serve for 2.
